This was a good carrot cake. The base was very moist, with items of pineapple, always an advantage for me personally in carrot wedding cake. I wasn’t a huge fan of how much coconut there is, but it did add more texture to the bottom, combined with the shredded carrots. I liked the crunch from the walnut bits, again, always a very important thing in carrot cake. I appreciated that they didn’t use raisins. It was spiced but only mildly, not unpleasant, but enough to be interesting.

I’m not so sure I agree that the pistachio and finely ground walnut on the trunk aspect added “your final touch of class”, it appeared as if sawdust in all honesty kinda, but, hey, it is thought by them appeared nice? And pistachio is reduced ingredient right? I liked the additional texture. The cream parmesan cheese icing was also good, with a strong cream cheese taste, creamy consistency. I liked my huge extra dollop of garnish on top. So, overall, solid. Not globe shattering, but good. Update Review: I’ve since purchased it for my group several times, which is always popular, with the masses, but with me also.
The frosting is key, so wealthy, so creamy, and so very much from it if you get a complete slice. The frosting helps it is addicting rather, and the carrot cake has enough going on that it remains interesting, even though we’ve had it many times now. I’ll keep this on on the rotation.
